How are you all doing today? The last few days have been very scary and traumatic for us. If you follow me on Instagram you will see why and how it has affected us. But for now the future looks bright and we are praying all goes well.
This time I am back with a lovely, fresh cake! I love fresh peaches! In fact it is my favourite stone fruit. It isn’t native to Bangalore ( where I live), but when it is in season I make sure to buy as much as I can and make all sorts of wonderful recipes with it. From smoothies, to cakes everything. Oh I even add it to my salads. The recipe for this cake is pretty simple but the hint of rosemary pairs so well with the peaches, you will find your self wanting more of this cake, as you eat it. I have always been a huge fan of simple whipped cream cakes with fresh fruit and many of my desserts revolve around fresh seasonal fruits. These peaches that I found were imported from China, but they were absolutely sweet and tender and juicy! So perfect with a vanilla sponge cake don’t you think ?
Rosemary And Peach Cake
Simple rosemary sponge with fresh peaches and cream
- 1/4th cup Rosemary
- 1/2 cup Milk
- 1/2 tsp Apple Cider Vinegar
- 170 gms Butter
- 180 gms Sugar
- 200 gms Flour
- 1 tbsp Vanilla Extract
- 1/2 tbsp Baking powder
- 1/4 tsp Salt
In a sauce pan combine milk and rosemary. Bring to a boil and simmer for 10 min. Let it cool completely and then strain the liquid and set aside
Pre heat your oven to 180 and line and grease two baking dishes with baking paper . Set aside
In another bowl cream the butter and sugar till pale
Then add the vanilla and eggs
Sieve the baking powder, salt and flour and set aside
Now alternate between the flour mixture and milk and add to the butter sugar egg mixture
Lastly add the vinegar and give it one good mix
Pour the batter into the prepared baking tins and bake for 35 - 40 min or till the tooth pick inserted comes out clean
Place on cooling rack and cool completely
Then remove from the cake tin and cool in the fridge
Assembling The Cake
Whipping cream - 1 cup
Peaches - 4 ( chopped fine)
Whip your cream according to instructions
Then layer your cake with cream and fresh fruit!
