How are you all doing? This time I am back with a new recipe that I am sure you will absolutely love! Do you like Lychees? Lychee is a tropical fruit that comes around this time of the year. My oldest memories of this fruit is when my father would buy them from the streets of Bangalore and bring them all the way to Cochin when I was a small girl. These fruits are so so sweet and jelly like. They come with a crisp outer cover. They are perfect as they are but I have used them here to make a fruity lemonade.
The fruit itself is really sweet so you do not need to add any more sugar in there. But if you want it sweeter, do add some honey or a sweetener of your choice. There are many available in the market these days starting from the vegan agave to date syrup, coconut sugar, stevia etc.
Make sure to consume the drink as soon as it is made as lemonade tends to become bitter as it sits. I love garnishing my drinks with a sprig of mint and in the recipe it adds a certain freshness to the drink as well. Now coming to the hibiscus concentrate, the ruby red liquid added to the glass, I bought mine from the Auroville ashram in Pondicherry but you can always buy it from Amazon as well.
- Lychee - 2 cups pulp ( skin peels and deseeded )
- Lime - 1 ( juice )
- Water - 3 cups
- Hibiscus Concentrate - 3 tbsp
- Honey - optional
- Mint Leaves - optional
- In a blender add the lychee pulp, lime juice and water. (you could also use ice )
- Blend to form a thin concentrate
- In a glass add 1 + ½ tbsp of hibiscus concentrate
- Then add the lychee juice.
- Top with ice and mint leaves
