It comes as no surprise that I am one for a quick breakfast and this recipe is the best way to get in all the proteins and the goodness of leafy vegetables early in the morning before you start your day. Starting with the goodness of olive oil, the flavours of garlic and chorizo, high in fiber and iron, this is a complete meal in itself.
This week has been crazy and we have been dealing with a few changes, such as school starting a bit earlier, the little one having a cold, the husband working really late and me not being able to sleep well (for a while now). The truth of the matter is that life is never the same two days in a row and its been close to two months since I hit the gym. So my waist line is also seeing a significant increase day after day and so are my moods 😛 So this recipe is my feel good yet eat healthy breakfast!! So lets get right into it.
Pre Heat your oven to 180
In a pan, on medium heat, add the chorizo. Fry till nice and crisp. Remove the fried chorizo and set aside
In the same pan, add the olive oil and garlic. Once the garlic begins to sizzle, add the onions and fry till pink
Then add the kale and cook for 4 – 5 mins
In another glass, add cream, water, chilli flakes, pepper and salt
Turn off the flame and add the cream mixture
Then add the eggs on top the creamy kale mixture. Add the crispy chorizo to the pan
Pop the pan into the pre heated oven and cook for 5 – 10 mins or as you like your eggs
Serve with bread
