How are you all doing? Its raining here and it would have been great to step up given that its a Friday an all. But hey you know what? I have a brand new recipe to share with you! Now this recipe is also a basic peanut butter recipe and if you omit the cacao Nibs you have just peanut butter. When you go the store and pick up a jar of peanut butter next time, turn to the contents and do give it a read. Usually it would include, a chemical stabiliser , oil, sugar, corn syrup some times and other ingredients that really do not need to be there. Home made peanut butter is just as good when it comes to the taste and trust me you can use organic peanuts and maybe substitute the refines sugar with jaggery, palm sugar, agave etc. There is always a big jar of peanut butter at my place because the husband loves his peanut butter in the morning protein smoothie and the little baby loves a peanut butter sandwich in the evenings so why not make it at home??
Raw Peanuts – 1 kg
Cacao Nibs – 1/4 cup
Palm Sugar / Jaggery – 4 tbsp ( optional)
Pre Heat your oven to 180 C
Pour the peanuts onto the baking sheet and make sure they are all spread out evenly
Bake for 45 min to 1 hour making sure to turn the peanuts every 10 min to they get roasted evenly
Once they are roasted take them out and cool for 10 mins
While they are still hot but cool enough to touch, pour some of them into a kitchen towel
Slowly using another towel, crush and rub the peanuts to remove their skin
Just blow the skin away to separate it from the roasted nut
Now if you want you can also buy roasted peanuts to avoid all those steps, but I find that this way I can roast the peanuts a little more than the store bought kind and therefore the flavour is better
Once the skin is off, pour the peanut into a good mixer.
Add the caca nibs to the blender as well
Blend on medium till you reach the required consistency
It might look very lumpy at the beginning but give it time. every once in a while give the mixture into the blende a nudge with a spatula
We like it creamy so I take it all the way
Once its ready pour into an airtight, clean glass jar.
I find that keeping it in the fridge insures that it stays for a month!
