Hello Beautiful People!
How are you all doing? We started this week with cake! No it wasn’t a birthday or a celebration, it was just the urge to bake and this time with Baileys. Have you every baked with Baileys? Oh the smell is so intoxicating you will immediately reach for the bottle too. LOL! Now everyone at home loves a good chocolate cake, but I wanted some thing that would help me bring out the undertones of Baileys and thats when cinnamon seemed to be the obvious complimentary flavour. My chocolate chip cake is super simple to make and goes very well with the above mentioned flavours.
Its been a while that I wrote a little about how life has been on this side.
There have been small yet significant changes in our lives, which I personally consider to be a change towards the better. But what really is “better”?. The word “Good” is used so loosely these days, I have come to the realisation that when some one says “I am good”, it just means, ” I have so much in my life right now, I don’t even know where to start and there is absolutely no point talking about it”. Like the other day, while talking to a friend we were discussing how social media dictates so many unreal fantasies in a persons life, the person on another screen wants to believe that someone else is blessed and happier than him. But truth is that the only thing colourful in that persons life might be the app on his phone! The fact is that we have made life so hard by trying to make it “Picture Perfect” C
Heaps of clothes we never wear, cosmetics we hardly use, shoes covered with dust, beauty mags that only leave us feeling even more inadequate and face book check ins, making you as your self “how does he do it?”. Infact there was time I decided to get off social media and I did so for a few months together. And you know what I learnt from it? I learnt that ” Life Goes ON!” . Regardless of how you feel about your self today or some one else today, tomorrow will come and after all the powder dusted word sleeps, what is left, is your mind, your heart and your reasons to go on!
If you find your self struggling, its time you too take a break to breathe. If you find waking up every morning tiresome, then find one simple thing that makes you happy and Do It!
This is not going to stop the bad things from happening, This will not make the world a better place to live! But this will give you hope. What makes us different from any other living thing? Is that we have the intelligence to hope! Hope for inner strength, for peace within, for positivity around us. Its not about praying, its about finding your light. The minute you realise that this train that you are traveling on is not a journey to happiness but a ride shared with all sorts of emotions to make your story, then you will want to be a character in it. Let your character be truthful to who you are, because when you do, it gives you hope 🙂
Dark Muscovado Sugar – 1 cup
Caster Sugar – 1/2 cup
Butter – 160 gms
Flour – 1 + 1/2 cups
Baking Powder – 1 tsp
Vanilla Extract – 2 tsp
Cinnamon powder – 1/2 tsp
Eggs – 3
Salt – 1/2 tsp
Baileys – 1/2 cup
Chocolate Chips – 2/3 cup
Milk – 4 tbsp
Chocolate Ganache –
Heavy Cream – 1 cup
Dark Chocolate chips ( 55%) – 2 cups
Heavy Cream – 1 cup
Sugar – 2 cups
Baileys – 1/4 cup
Pre Heat your oven to 180 C
Line two cake pans with parchment and butter the sides
In a bowl cream the sugars and butter till pale yellow
Then add the eggs one at a time and whisk well after every addition
Once done, vanilla extract , cinnamon, salt, and flour
Next add the baileys and milk. Mix well to combine
Finally add the chocolate chips to the batter and mix
Diivide equally into the two prepared pans and bake for 45 — 50 mins or till a tooth pick inserted comes out clean
Set aside to cool
Mean while make the chocolate ganache
In a sauce pan bring the cream to boil, then add the same to the chocolate chips and mix to form a nice thick ganache
Set aside to cool ( once it becomes thick whip on high and set aside again )
In another bowl add the cold cream and beat will stiff peaks
Then add the sugar and baileys
Whip again to reach stiff peaks
Once the cakes have cooled, cut into two and assemble your cake
